Brett has been in the catering/hospitality industry for over 27 years, starting out as a butchers boy whilst at school and kitchen porter whilst at college. After leaving college he worked at the Award Winning Cotswold House Hotel in Chipping Camden, and then Hotel of the Year and Michelin Starred Grosvenor Hotel in Chester.
Brett returned to Birmingham to work at the Hyatt Regency Hotel, where he stayed for almost 19 years, the majority of those in the joint role of Executive Chef and Director of Food and Beverage. Brett was responsible for training and coaching a great team at the Hyatt over the years, both front and back of house, many of whom went on to win awards of their own, an achievement that he is extremely proud of.
Brett has catered for events large and small, and served many ‘tricky’ stars, from the music, film, sports industries, as well as catering for the USA track and field team, and hosting the Conservative Conferences and many more high profile wedding and events.
Brett is a member of the British Culinary Federation and an Officer in the Ordre Des Coteaux de Champagne.
At the end of 2012, and with the support of his wife Emma, children Isabella and Eleanor, and dogs Stanley Arthur and Bosco, Brett left the Hyatt to fulfil his lifelong dream of owning and running a wonderful country pub. He could not ask for a better place than The King’s Head to fulfil this dream.
